Vegan Banana Scones



These Vegan Banana Scones are a tasty treat that goes well with brunch or breakfast. They are soft, moist, and taste like bananas all the way through. You can also make them without dairy or eggs.

Ingredients:

  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup non-dairy milk such as almond or soy
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts optional

Instructions:

Preheat the oven to 375F 190C and line a baking sheet with parchment paper

In a large mixing bowl, combine mashed bananas, coconut sugar, melted coconut oil, non-dairy milk, and vanilla extract

In another bowl, whisk together the flour, baking powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, stirring until just combined

Fold in chopped walnuts if using

Transfer the dough onto a floured surface and gently pat it into a circle about 1 inch thick

Using a knife or biscuit cutter, cut the dough into 8 wedges or rounds

Place the scones onto the prepared baking sheet and bake for 18-20 minutes, or until golden brown

Remove from the oven and let cool on a wire rack before serving
