Gluten-Free Cinnamon-Streusel Coffeecake



This tasty cinnamon-streusel coffeecake is made with a gluten-free baking mix and is a gluten-free treat. It tastes great and is moist, so you can eat it for breakfast, brunch, or as a sweet snack with your favorite coffee or tea.

Ingredients:

  • 2 cups gluten-free baking mix
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/2 cup gluten-free oats
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped pecans or walnuts optional

Instructions:

Warm the oven up to 175F 350C

Prepare a 9-inch square baking dish by greasing it

Put gluten-free baking mix and granulated sugar in a large bowl and mix them together

Add the sour cream, eggs, vanilla extract, and melted butter

Stir until everything is well mixed

Mix brown sugar, gluten-free oats, cinnamon, and chopped nuts if using in a different bowl

Once the baking pan is ready, spread half of the batter into it

Put half of the streusel mix on top of the batter

Carefully spread the rest of the batter over the streusel layer, and then add the rest of the streusel mixture on top

After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean

For 10 minutes, let the coffeecake cool in the pan before you serve it
