Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup almond milk
- 1/3 cup lemon juice
- 1/4 cup melted coconut oil
- 1 tbsp lemon zest
- 1 tsp vanilla extract
Instructions:
Preheat oven to 350F 175C
Grease and flour a loaf pan
In a large bowl, whisk together flours, coconut sugar, baking powder, baking soda, and salt
In a separate bowl, mix almond milk, lemon juice, melted coconut oil, lemon zest, and vanilla extract
Pour wet ingredients into dry ingredients and stir until just combined
Pour batter into prepared loaf pan and smooth the top
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean
Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
