Coconut Cauliflower Rice Salad



A refreshing and AIP-friendly salad that replaces traditional rice with grated cauliflower and combines it with the tropical flavors of coconut and lime.

Ingredients:

  • 1 medium cauliflower, grated
  • 1 cup unsweetened shredded coconut
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon coconut aminos
  • Salt and pepper to taste

Instructions:

Grate the cauliflower and shred the coconut together in a large bowl

Cut up the cucumber, red bell pepper, cilantro, and green onions and add them to the bowl

To make the dressing, mix the coconut aminos, extra-virgin olive oil, and lime juice in a small bowl with a whisk

Add the dressing to the cauliflower rice mix and mix everything together until it's well mixed

Add salt and pepper to the salad as needed

Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
