Ingredients:
- 1 cup honey
- 1/4 teaspoon sea salt
- 2 cups whole milk
- 1 cup heavy cream
- 4 large egg yolks
- 1/4 cup sugar
Instructions:
In a saucepan over medium heat, caramelize honey until golden brown, stirring occasionally, about 5-7 minutes
Stir in sea salt and set aside to cool slightly
In a separate saucepan, heat milk and cream until just simmering
In a bowl, whisk egg yolks and sugar until pale and thick
Slowly pour the warm milk mixture into the egg yolks, whisking constantly
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon
Remove from heat and stir in the caramelized honey mixture
Let the mixture cool completely
Pour the cooled mixture into popsicle molds
Insert sticks and freeze until solid, at least 4 hours or overnight
