Oatmeal Cranberry Cookies with White Chocolate



These delicious oatmeal cranberry cookies with a hint of cinnamon and sweet white chocolate have the perfect chewy-crisp texture. A tasty treat for any occasion!

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, and salt

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined

Stir in the dried cranberries and white chocolate chips

Using a spoon or cookie scoop, drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
