Ingredients:

  • 2 filet mignon steaks 6 oz each
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh parsley

Instructions:

Season the filet mignon steaks with salt and pepper on both sides

Heat olive oil in a skillet over medium-high heat

Add the steaks and cook for 4-5 minutes on each side for medium-rare, or to your desired level of doneness

Remove the steaks from the skillet and set aside

In the same skillet, melt butter and add sliced mushrooms and minced garlic

Cook until the mushrooms are tender, about 5 minutes

Stir in beef broth and heavy cream, and bring to a simmer

Simmer until the sauce thickens slightly, about 2-3 minutes

Return the steaks to the skillet and cook for an additional minute, spooning the sauce over the steaks

Remove from heat and sprinkle with chopped fresh parsley before serving
