Chocolate Coffee Cupcakes with Mocha Ganache and Mascarpone Cream



If you like coffee, these rich chocolate coffee cupcakes are a dream come true. They are moist and rich, and the mocha ganache and mascarpone frosting on top make them taste even better. Great for special events or treats that you really want.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • For Mocha Ganache:
  • 1/2 cup heavy cream
  • 1/2 cup semisweet chocolate chips
  • 2 tsp instant coffee granules
  • For Mascarpone Cream:
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • For garnish:
  • Chocolate shavings
  • Cocoa powder

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Add the cocoa powder, baking powder, baking soda, and salt to a bowl and mix them together

Mix the eggs, brewed coffee, buttermilk, and vanilla extract in a different bowl using an electric mixer

Add the wet ingredients to the dry ones and mix them together until everything is well mixed

Fill each cupcake liner about two thirds of the way to the top with batter

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

After taking the cupcakes out of the oven, let them cool in the muffin tin for a few minutes

Then, move them to a wire rack to cool all the way down

Get the Mocha Ganache ready while the cupcakes cool

Put the heavy cream in a small saucepan and heat it over medium-low heat until it begins to simmer

Take it off the heat and mix in the instant coffee granules and semisweet chocolate chips until the mixture is smooth

Let the ganache cool down a bit

Once the cupcakes are cool enough to touch, use a spoon to drizzle the Mocha Ganache over them

Wait a while for the ganache to set

Mascarpone cheese, powdered sugar, and vanilla extract should all be mixed together in a bowl

Mix until it's nice and smooth

You can pipe or spread the Mascarpone Cream on top of the cupcakes that have been covered in ganache

Add cocoa powder and chocolate shavings as a garnish
