Ingredients:
- 1 cup 2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup chopped pecans
- 1 cup caramel bits
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup chocolate chips, melted for drizzling
- 1/4 cup caramel sauce for drizzling
Instructions:
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the eggs and vanilla extract to the mixture, and beat until well combined
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chocolate chips, chopped pecans, and caramel bits
Cover the dough and refrigerate for at least 1 hour
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Using a cookie scoop or spoon, drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are set
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
In a small mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy
Once the cookies have cooled, pipe or drizzle the cream cheese mixture over each cookie
Drizzle melted chocolate and caramel sauce over the cookies for an extra indulgent touch
Let the drizzles set before serving the cookies
