Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 can 15 oz chili con carne
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Sour cream for garnish
- Fresh cilantro for garnish
Instructions:
In a large mixing bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt
In a separate bowl, whisk together milk, vegetable oil, and eggs
Pour the wet ingredients into the dry ingredients and stir until just combined
Preheat your waffle iron according to the manufacturer's instructions and lightly grease it
Pour enough waffle batter into the iron to cover the waffle grid
Close the iron and cook until waffles are golden brown and crispy
While the waffles are cooking, heat the chili con carne in a saucepan over medium heat until warmed through
Once the waffles are done, transfer them to serving plates
Top each waffle with a generous spoonful of chili, shredded cheddar cheese, chopped green onions, sour cream, and fresh cilantro
Serve immediately and enjoy your Chili and Cornbread Waffles!
